How To Create Canned Responses In Outlook 365
Answer
This is a standard warning that I give whenever I see a thread had a message from a support scammer. You may have not seen the message (it was deleted from the forum), but if you had subscribed to the thread you would have received an email with the scam message. Just in case, here's my warning:
Do NOT respond to replies asking you to contact Microsoft Support, Executive, agent, tech, MVP, advisor or anyone else.
No legitimate person or entity will ever ask you to call or contact them. Do not call phone numbers. Do not reply to email messages. Do not click links to phony agents in your web browser.
Questions and comments are answered in the forums themselves, not elsewhere.
A request asking you to contact someone is fake. It is an attempt to take over your computer, steal your data, your money and your identity.

I am an unpaid volunteer and do not work for Microsoft. "Independent Advisors" work for contractors hired by Microsoft. "Microsoft Agents" work for Microsoft Support.

Hello Sierra
The word processor behind the composing engine in Outlook for Mac is Microsoft Word running behind the scenes. However, Microsoft has not provided a way to use Quick Parts (still called AutoText in Word for Mac) in Outlook.
I can't think of a really quick way of accomplishing your goal without doing some extra work.
For example, you could have a Word document with your canned responses and then copy and paste them into your email messages. That's clunky.
You might make a bunch of different signatures in Outlook, and put them in, but that's clunky too.
If you're interested in doing a quite bit more work, you can make an AppleScript that handles this for you. It's a big up-front investment in time and learning, but I think you would eventually get the results you're seeking.
